Rooted in a long family tradition of coffee farming, Alexander Sabillon represents the next wave of innovation in the Santa Barbara region of Honduras. Four years ago, he revived a 1.5-hectare farm destroyed by leaf rust, replanting and caring for every tree with remarkable dedication.
While most of his farm grows Catuaí, Alexander also cultivates Parainema a variety developed by IHCAFE that stunned the coffee world when it won the 2017 Honduras Cup of Excellence. Now in his third Parainema harvest, Alexander’s careful processing and passion have produced a coffee that reflects both heritage and bold experimentation.
